Cow Stomach

Origin:
The stomach of Bos taurus domesticus Gmelin, or Bubalus bubalis Linnaeus, an animal of the family Bovidae.

Tripe, the lining of a cows' stomach, comes in three kinds: honeycomb, pocket, and plain or smooth tripe. Honeycomb is considered the most tender.

Cow stomach should be pale white. Store loosely wrapped in the refrigerator for no more than one day. Cow stomach is available in supermarkets and specialty butcher shops.

Also called Beef Tripe.
 
Properties:
Sweet in flavor, mild in nature, it is related to the spleen and stomach channels.
 
Functions:
Benefits the spleen, stomach, and semen; nourishes blood and qi (energy), tones up deficiency.
 
Applications:
1. For poor appetite, indigestion, diarrhea due to deficiency in stomach and spleen qi:

Boil a whole piece of cow stomach in water with 10 g. of tangerine peel, 5 g. of amomum fruit, and 5 g. of fresh ginger for one hour. Drink the soup and eat the stomach.

2. For dizziness, tiredness due to weakness after prolonged illness:

a) Add fresh ginger and vinegar to cook with cow stomach and eat it.

b) Add 15 g. of milk vetch root and boil the cow stomach in water for one hour. Drink the soup and eat the cow stomach.

3. Cow stomach is also used for diabetes, anemia (deficient in red blood cells).
