蜂蜜含果糖、葡萄糖、蔗糖、麥芽糖、葡聚糖、無機鹽 (主要是鎂、鈣、鉀、鈉、磷,其次是鐵、錳、銅等)、蛋白質、有機酸 (檸檬酸、蘋果酸、乳酸、蟻酸等)、主要油 (揮發油)、酵母、多種 類 (過氧化 、澱粉 、轉化 、酯 等)、維生素 A、維生素 B1、維生素 B2、維生素 B6、維生素 C、維生素 D、維生素 E、維生素 K、胡蘿蔔素、樹膠樣物質、蠟、色素、芳香性物質及花粉粒等。
療傷作用
蜂蜜作治療燒傷、潰瘍、皮膚損傷、化膿性創傷、外科手術後創傷等用,全球各地,世代相傳,而近代臨床測試,亦屢屢證明功效極佳 (見 P.C. Molan, "The Evidence Supporting the Use of Honey as a Wound Dressing," The International Journal of Lower Extremity Wounds Vol. 5, No. 1 〔March 2006〕, pp. 40-54)。
抗菌作用
蜂蜜有抑制和殺滅機體內外多種細菌的作用, 因此亦可治多種疾病。蜂蜜抑菌和殺菌功能隨蜜液濃度而變化,低濃度具有抑菌作用,高濃度具有殺菌作用。蜂蜜抗菌的原理,目前認為是滲透作用、蜂蜜所含過氧化氫和高酸度的關係 (見 "Honey as an Antimicrobial Agent" Waikato Honey Research Unit, Department of Biological Sciences, The University of Waikato ﹝November 16, 2006﹞)。
防癌及抗腫瘤
蜂蜜所含植物營養素,包括咖啡酸 (caffeic acid)、乙基咖啡 (methyl caffeate),咖啡酸苯乙酯 (phenylethyl caffeate) 和 phenylethyl dimethylcaffeate 等,都在不同的研究中顯示防癌及抗腫瘤的功效 (見 Chia Chiao, Adelaide M. 對心血管系統的影響

蜂乳: 為工蜂咽腺分泌的乳白色膠狀物和蜂蜜配製而成的液體。甘,平。有滋補、強壯、益肝、健脾作用。用於病後虛弱,小兒營養不良,老弱體衰,傳染性肝炎,風濕性關節炎,胃、十二指腸潰瘍等。
自然界最有效率生物社群之一的蜜蜂,奉行一妻多夫制,歷千百萬年而不變。雄蜂努力侍候一隻蜂后,傳宗接代後,要面對被工蜂趕離蜂巢,飢寒交迫,曝屍荒野的命運。
為什麼一隻肥大懶惰的蜂后,能令整窩幾千隻工蜂任勞任怨、絕無異心、努力築巢、照顧幼蜂、採集花蜜?原來因為蜂后懂得「迷魂」。
一組在紐西蘭著名蜂蜜出產地 Dunedin 省的研究員,發現兩個很有趣的現象。首先,工蜂原來可以脾氣很大。令他們暴躁的神經傳導物,是一個可令情緒大漲的多巴胺 (Dopamine)。另外,蜂后有一個秘密武器,叫 Homo Vanillyl
Alcohol (HVA),是一個訊息素 (Pheromone),能抑制多巴胺。HVA 的揮發性很強。 HVA 被工蜂吸進身體後,能阻擋多巴胺,不讓它附上接受體上,令工蜂自然地火氣全消,柔順如小綿羊 (見 Kyle T. Beggs, Kelly A. Glendining, Nicola M. Marechal, Vanina Vergoz, Ikumi Nakamura, Keith N.
